Lemon Delicious Puddings are one of my favourite desserts. These sweet and lemony self-saucing puddings are perfect to serve as an impressive after dinner treat or even as part of an afternoon tea. The fresh tartness of the lemon makes these puddings perfect to serve as summer rolls around. I know it sounds weird, but the puddings actually taste yellow, they taste happy!

The recipe I use for the puddings comes from the Australian Women’s Weekly cookbook, ‘Eating Together’, and I can honestly say that it has never let me down. On that note, this is a really great cookbook to add to your collection if you enjoy making wholesome home cooked food like me!

125g melted butter
2 teaspoons lemon zest
1 1/2 cups castor sugar
3 eggs, separated into whites and yolks
1/2 cup self-raising flour
1/3 cup lemon juice
1 1/3 cups milk
Preheat the oven to 180C. Grease six 1-cup oven-safe dishes/ramekins. Place dishes in a large baking dish.
Combine the melted butter, lemon zest, sugar and egg yolks in a large bowl. Whisk in sifted flour then lemon juice. Slowly whisk in the milk. The mixture should be smooth and runny.
Beat the egg whites in a small bowl with an electric mixer or in a freestanding electric mixer until soft peaks form. Fold egg whites into the lemon mixture, one half at a time.
Divide the lemon mixture among the dishes. Add enough boiling water to the baking dish (outside the dishes) to come halfway up the side on the overproof dishes. Bake for 30 minutes or until puddings have risen and are a light golden colour.
You can serve the puddings as they are, but I always dust a little icing sugar over the top to make them look pretty.
