I’ve been trying to clean up my diet a bit recently after an incredibly festive December holiday and birthday week last week. I don’t have a terrible diet, but I do have a massive sweet tooth which can be a big problem sometimes. Put it this way, I have been known to single handedly finish entire (giant) slabs of chocolate.
To try and satisfy my sweet cravings I’ve introduced some fruit into my diet which I find I look forward to a lot more and prefer over sugary foods now. Mango has been my fruit of choice this week and I’m dreading the day that they go out of season until next year. Luckily, bananas are an all-year-round kind of fruit and are super versatile. You can eat them as they are, pair them up with PB on toast, add them to smoothies, and now thanks to this recipe make them into delicious banana flapjacks!
All it takes is 4 simple ingredients and a good non-stick pan to create these delicious and healthy flapjacks that pair so well with fresh fruit and honey.
2 ripe bananas, broken up
1/3 quick cooking oats
1/2 tsp baking powder
Honey to drizzle
Fresh fruit of choice (e.g. chopped mango, slices of banana, berries…)
Place the bananas, oats, baking powder, and eggs in a food processor or blender (NutriBullets work well too) and blitz until you have a smooth mixture with no lumps.
Heat a non-stick pan over a medium-high temperature and spray with non-stick spray. Spoon a little mixture into the pan to form a flapjack. (I do one or two at a time). Cook until little bubbles appear on the surface and the edges have firmed up a bit so that it’s easy to slip a spatula underneath it without breaking it. Flip the flapjack onto the other side and cook for 20-30 seconds. Remove to a separate plate and repeat until all the mixture is finished.
Stack up the flapjacks, top with fresh fruit of choice and drizzle with honey to your heart’s desire.
