Alright so this is not necessarily an 'Italian Platter', but my love for platters as meals definitely stems from my Italian heritage. The only component of this platter that's not Italian is the hummus and pita bread (maybe carrot sticks???). Other aspects may be more French, however I have a French great-grandmother and am not too fastidious when it comes to separating the two.

My first recipe of 2018 is for this vanilla sponge cake topped with fresh blueberries that I made whilst staying in a cottage in Underberg at a place called Lake Naverone. The first few days of our holiday were quite cold and wet so all I wanted was hot tea and a slice of cake.
I had a few friends over a while back and decided I wanted to make a snack for us to have with a few drinks around the fireplace. I rummaged around in my pantry for a bit and discovered that we had two tins of chickpeas and, lucky for me, we also had some tahini (sesame seed paste) in the fridge. The fresh tartness of the lemon makes these puddings perfect to serve as summer rolls around. I know it sounds weird, but the puddings actually taste yellow, they taste happy!

I've decided to call these 'Triple Threat' lemon cupcakes because as far as I'm concerned, they possess the three elements required to create a perfect cupcake. Beautiful spongey cake with flecks of fresh lemon zest dotted inside, filled with a tart lemon curd surprise, and topped with a sweet lemony cream cheese frosting...these cupcakes are a real game changer.
