Alright so this is not necessarily an 'Italian Platter', but my love for platters as meals definitely stems from my Italian heritage. The only component of this platter that's not Italian is the hummus and pita bread (maybe carrot sticks???). Other aspects may be more French, however I have a French great-grandmother and am not too fastidious when it comes to separating the two.

My first recipe of 2018 is for this vanilla sponge cake topped with fresh blueberries that I made whilst staying in a cottage in Underberg at a place called Lake Naverone. The first few days of our holiday were quite cold and wet so all I wanted was hot tea and a slice of cake.
I had a few friends over a while back and decided I wanted to make a snack for us to have with a few drinks around the fireplace. I rummaged around in my pantry for a bit and discovered that we had two tins of chickpeas and, lucky for me, we also had some tahini (sesame seed paste) in the fridge. So basically it was a no brainer that I was going to make hummus.
As the days start to get a little longer, the sun a little warmer, and the number of days to the summer holiday a little shorter I start to crave a good old G&T more and more. On one particularly warm day a week or two ago I took it upon myself to do some experimenting with gin garnishes so that my family and I could soak up the sun with some refreshments in hand.
I've decided to call these 'Triple Threat' lemon cupcakes because as far as I'm concerned, they possess the three elements required to create a perfect cupcake. Beautiful spongey cake with flecks of fresh lemon zest dotted inside, filled with a tart lemon curd surprise, and topped with a sweet lemony cream cheese frosting...these cupcakes are a real game changer.
Not only is this cinnamon roll definitely one of the Top 10 Most Delicious Things I've Ever Eaten, it's really fun to make too! I felt like a kid again getting my hands gooey kneading the dough and spreading thick layers of sugary cinnamon butter. The best part was definitely rolling the dough up layer after layer.

I've been trying really hard to eat a little better this week and for me that basically means I've been trying to cut out as much refined sugar as I possibly can. However, I am only human and have a massive sweet tooth, so it comes as no surprise that on the very first day of trying to be healthy I found myself standing inside my pantry trying to figure out if I could make something chocolate.
So, I decided to start my week off right - with a nice long walk in the fresh air and sunshine, and a tasty smoothie bowl to refuel.
